is there a simple pick that will give me the length and width of the
flat...no matter what shape?

Build the dimension you want to see into the feature, then to display them
select feature/modify.

But most of the models we un-fold are imported from other systems.....was
just looking for an instant solution

Have you tried 'Info>Model size'. Might give you close to what you want, although,
it's a pretty lame measure, based on a nearly useless bounding box diagonal.
'Analysis>Model analysis' gives you square units of surface area and cubic units
of volume which, again, might be of some help, though it's not precisely what you
asked for. Other than these simple tools, it does, as Dave pointed out, get more
complicated. Including creating extra features (like wrapped curves or points at
extremities) that you'd use for measurement.
