I'm using a CTB file that plots everything in black but using different
lineweights. The only thing is, when i send the plot job to our HP plotter,
any jpegs that are in the drawing come out full color. Is there a way to set
it to plot "greyscale" for the image without having to alter the image?

Plot Style tables are not applied to image files: you will need to
'grayscale' your image separately to get it to print that way.

we have had that issue also.
within your pc3 file, custom settings, select "grayscale" in your color
settings.
